USE - Formulation and development of ice cream used for protein malnutrition and also help to prevent nutrition deficiency disorders. ADVANTAGE - The composition is intended to develop a healthy nutritious spirulina and ash gourd incorporated ice cream to enhance the protein content and digestibility and absorption. The cost of 150 ml of the formulated minor millets condensed milk was Rs. 32.8 of Indian currency. The cost of the product less compared to the market available product Hence these are applicable in all population of country. The spirulina and ash gourd ice cream as most acceptable ice cream and the shelf life and cost of the product were calculated. According to the results spirulina and ash gourd ice cream was high compare to the vanilla ice cream. There was significantly high value for protein, fiber, vitamin B6, C and E, iron and phosphorous in spirulina and ash gourd ice cream. |
