成果简介NOVELTY - Invention relates to food industry and can be used in production of instant products. Method for production of instant pea soup with uncooked smoked wheat gluten sausage involves preliminary treatment of the initial raw material. Uncooked smoked sausage is cut from wheat gluten; washing, calibration and peeling of potatoes; peeling, chopping and sautéing onions and carrots; soaking, cooking and milling peas to a puree state; potatoes cutting into cubes 1×1 cm; cutting onions and carrots into cubes 0.5×0.5 cm. Then it is subjected to shock freezing in Abat lyophilic chamber. In the chamber, the products envisaged by the recipe are separately frozen to a temperature of -15 °C and held for 2 hours. Then in Abat lyophilic chamber temperature is increased to 45 °C and dried cut into cubes 1×1 cm potatoes for 10 hours, cut uncooked smoked wheat gluten sausage for 5 hours, cut into cubes 0.5×0.5 cm onions and carrots for 10 hours, pureed peas for 8 hours. Then sets of dried components are made with seasonings added to each package, packed and vacuumized. Initial components are taken in the following ratio, wt.%: potatoes – 25; carrots – 9.5; bulb onions – 9.5; uncooked smoked sausage from wheat gluten – 25; pea puree – 30; seasoning – 1. USE - Food industry.
