成果简介NOVELTY - Nanoemulsion comprises exopolysaccharide and flaxseed oil, where the exopolysaccharide is produced by Ganoderma gibbosumhaving accession number: MTCC 13375. USE - Nanoemulsion as source of omega-3 fatty acids (claimed); used for fortifying the dairy products such as yogurt, cheese, and cream cheese, enhancing the levels of alpha linolenic acid; used in dairy industry. ADVANTAGE - The nanoemulsion increases the solubility, antioxidant efficacy and bioavailability of exopolysaccharide and fortifies the dairy products to enhances the shelf life by inhibits lipid oxidation and increases the daily intake of omega-3, increases the market and nutritional value of the products; enhances the levels of alpha linolenic acid, inhibits the lipid oxidation and increases the shelf-life of dairy products such as yogurt, cheese, and cream cheese without affects their color, taste, aroma, and texture; employs exopolysaccharide that contains both the hydrophobic and hydrophilic residues, 33.4% carbohydrate, 12.7% protein content, has average molecular weight of 155 kDa; average droplet size of 101.5 nm; improves the antioxidant potential of exopolysaccharide. DETAILED DESCRIPTION - An INDEPENDENT CLAIM is included for a nano-emulsion comprising subjecting exopolysaccharide and flaxseed oil as a source of omega-3 fatty acids, 200 µL flaxseed oil, 150 µL surfactant mix of Tween(RTM: polysorbate 80) 80/ethanol in a ratio of 2:1, and 100 mg/mL test EPS to 30% ultrasonication amplitude and 5 minutes ultrasonication time.
