成果简介NOVELTY - The method involves: (i) cleaning raw material and grinding the raw material into flour; (ii) mixing the flour with water to obtain a first mixture; (iii) adjusting pH of the first mixture to 8-11; (iv) agitating the first mixture to solubilize the protein at a temperature of 25-35℃; (v) separating a precipitated solute from solvent in the first mixture, where the separated solvent is the first liquid; (vi) mixing the separated solute with water to obtain a second mixture; (vii) adjusting pH of the second mixture to 8-11; (viii) agitating the second mixture to solubilize the protein at a temperature of 25-35℃; (ix) separating a precipitated solute from solvent in the second mixture, where the separated solvent is the second liquid; and (x) mixing the liquids collected to obtain a solution. USE - Optimized method for extracting protein from a plant source. ADVANTAGE - The method gives high yield and better functional properties when compared to plant protein isolates available in the market. The method not only enables a notable increase in purity but also enhances overall yield. The proprietary adjustment has led to significant improvement in the functional properties of the resulting protein isolate, particularly in terms of improved solubility, better water holding capacity and emulsification. DETAILED DESCRIPTION - The method involves: (i) cleaning raw material and grinding the raw material into flour; (ii) mixing the flour with water to obtain a first mixture; (iii) adjusting pH of the first mixture to 8-11; (iv) agitating the first mixture to solubilize the protein at a temperature of 25-35℃; (v) separating a precipitated solute from solvent in the first mixture, where the separated solvent is the first liquid; (vi) mixing the separated solute with water to obtain a second mixture; (vii) adjusting pH of the second mixture to 8-11; (viii) agitating the second mixture to solubilize the protein at a temperature of 25-35℃; (ix) separating a precipitated solute from solvent in the second mixture, where the separated solvent is the second liquid; (x) mixing the liquids collected to obtain a solution; (xi) adjusting the pH of the solution to iso electric point of the protein using citric acid and allowing the solution to rest to precipitate out the protein, filtering and centrifuging the protein precipitate; and (xii) subjecting the protein precipitate to neutralization, homogenization and spray drying, to obtain the final protein extract.
