ADVANTAGE - The citrus-based cube has naturally available contents of vitamin C, flavonoids, and proteins, high shelf life of 40-60 days, has rich nutrient compositions and is rich in nutrient compositions. The process is simple and eco-friendly. DETAILED DESCRIPTION - An INDEPENDENT CLAIM is included for a process for preparing a citrus-based cube, which involves (a) obtaining a predetermined amount of a citrus extract and a predetermined amount of a gourd extract and sauteing for a first predetermined time period at a first predetermined temperature to obtain a sauteed extract mixture; (b) adding a predetermined amount of a fattening agent to the sauteed extract mixture and cooking for a second predetermined time period at second a predetermined temperature to obtain a fattened mixture; (c) adding a predetermined amount of emulsifying agents to the fattened mixture and cooking for a third predetermined time period at third a predetermined temperature to obtain an emulsified mixture; (d) adding a predetermined amount of a sweetening agent having a predetermined brix value to the emulsified mixture and mixing to obtain a uniform mixture; (e) adding a predetermined amount of a coloring agent and cooking for a fourth predetermined time period at a fourth predetermined temperature to obtain a semi-solid mixture; (f) adding a predetermined amount of a flavoring agent and a predetermined amount of a preservative to the semi-solid mixture; and vii. molding the mixture in a mold container having a predetermined height, followed by resting for a fifth predetermined time period at a fifth predetermined temperature and cutting in desired shapes to obtain a citrus based cube.
